If you want to use the Ethereum testnet Sepolia, or previously added testnets for other networks, flick the 'Show test networks' toggle accessible via the network selector:
Testnet funds do not have any real-world value. If someone is trying to convince you otherwise, you might be getting scammed. See our article on testnet ETH scams for more information.
You can toggle the ability to show fiat values for testnets on/off in your MetaMask settings, on both Extension and Mobile. This feature is off by default.

Alternatively, on Extension you can also configure whether testnets are displayed by going to Settings > Advanced:
Once this setting is turned on, switch to a testnet by heading to the network selector at the top of the homepage and scrolling until you find the one you need:
